Cabbage Fry Frittata

  • 1 X serve leftover cabbage fry

  • 2 X eggs-beaten

  • 2 X TBS pouring cream Seasonings/herbs your choice

  • 1 X TBS butter

  • ¼ cup grated cheese for top


  • Heat butter in small fry pan med/high heat

  • Re-heat cabbage fry in pan

  • Beat eggs, cream and seasonings

  • Pour over cabbage fry-cook until sides start to look cooked

  • Sprinkle grated cheese and put under a med/hot griller (broiler) to cook top and brown cheese

  • Frittata is cooked when you can no longer see any “wet egg” jiggling on top Serve with sour cream and a side salad or low carb vegetables of choice
