Ingredients:
1 X serve leftover cabbage fry
2 X eggs-beaten
2 X TBS pouring cream Seasonings/herbs your choice
1 X TBS butter
¼ cup grated cheese for top
Method:
Heat butter in small fry pan med/high heat
Re-heat cabbage fry in pan
Beat eggs, cream and seasonings
Pour over cabbage fry-cook until sides start to look cooked
Sprinkle grated cheese and put under a med/hot griller (broiler) to cook top and brown cheese
Frittata is cooked when you can no longer see any “wet egg” jiggling on top Serve with sour cream and a side salad or low carb vegetables of choice
